摘 要:为揭示不同香型烤烟表面颜色特征,采用L*a*b*C*颜色空间表征方法对14个省份三种香型烤烟不同部位烟叶表面颜色进行量化分析.结果表明:① 烟叶表面颜色红度a*在浓香型和中间香型烤烟 异程度较大,中间香型烤烟表面颜色的饱和度C*变化幅度大于浓香型和清香型烤烟.②中间香型烤烟表面颜色的明度L*最大,在中部叶和上部叶显著高于清香型烤烟;清香型烤烟下部叶表面颜色的红度a*显著高于浓香型和中间香型烤烟.颜色饱和度C*在不同香型烤烟间不存在显著性差异.③同一香型烤烟表面颜色均呈现下部叶的明度L*最高,上部叶的最低,且在不同部位间存在显著性差异,同时,同一香型烤烟表面颜色的红度a*均表现为上部叶最高,下部叶最低.④ 浓香型烤烟表面颜色的红度a*和黄度b*、颜色饱和度C*呈极显著负相关,而清香型和中间香型的相关性都很小.

Abstract To explore the surface color characteristics of different flavor types of flue-cured tobaccos, the surface color of different parts of three flavor types of flue-cured tobacco from 14 provinces were conducted quantitative analysis using L* a* b* C* color space characterization method. The results were as follows. (1) The reddishness (a*) of surface color had greater variation degree in strong flavor and neutral flavor type tobacco, and the changing amplitude of surface color saturation (C*) of neutral flavor type tobacco was larger than those of strong flavor and light flavor types. (2) The rightness (L*) of surface color of neutral flavor type tobacco was the largest, and the rightness of upper leaves and lower leaves were significantly higher than those of light flavor type tobacco. The reddishness (a*) of lower leaves of light flavor type tobacco was significantly higher than those of strong flavor and neutral flavor type. The surface color saturation (C*) in different flavor type tobaccos did not have significant difference. (3) For the same flavor type tobacco, the rightness (L*) of surface color of lower leaves was the highest, that of upper leaves was the lowest, and there were significant differences among different parts. Similarly, the reddishness (a*) of surface color of upper leaves was the highest, and that of lower leaves was the lowest. (4) There were highly significantly negative correlations between reddishness (a*) and yellowness (b*) or color saturation (C*) in strong flavor type tobacco, while the correlations in light flavor and neutral flavor type tobaccos were small.

烤煙香型和烟叶质量风格特色的形成关系密切,是当前国内特色烟叶研究的焦点之一[1-3].我国烤烟香型一般分为三种:浓香型烤烟、中间香型烤烟和清香型烤烟[4,5].研究结果表明,烤烟不同香型风格的形成受生态条件和品种特性的影响较大,同一品种不同产地的烤烟香气风格不尽相同[6,7].目前,对于烤烟致香物质种类和相关性分析的研究报道较多[8,9],对不同烤烟香型表面颜色特征的差异性研究尚未见报道.烤烟颜色是评价烤烟外观质量的重要指标之一[10,11], 关于颜色空间分布参数的研究已在多种行业和领域广泛应用,大多集中在对同一种植区不同品种烤烟表面颜色差异性研究领域[12-14].本研究主要对不同部位不同香型烤烟颜色空间分布特征进行量化分析,旨在揭示不同香型烤烟表面颜色特征,为优质特色烟叶原料生产提供一定的理论支撑.
